This Bourbon cultivar coffee
is direct-trade from our friends at Finca Buenos Aires, located at 1100-1350 meters above sea level on the slopes of the Santa Ana volcano in the Apaneca-Ilamatepec mountains, near the border with Guatemala. The finca’s trees grow in rich volcanic soil.
What makes this coffee special is that it has undergone the Honey Process of preparation, which differs from the method that most coffees sold in the US experience. After the coffee cherries are picked, they are de-pulped, meaning that the “skin” and the “fruit” of the coffee cherry is removed, but the mucilage is allowed to remain on and surrounding the bean.
The gooey mucilage looks somewhat like honey, hence the name. Usually this mucilage is washed away, but in the Honey Process it is allowed to stay on the beans as they dry over a period of several days to a couple of weeks. The mucilage contains lots of natural sugars, and as the coffee beans dry the mucilage dries as well, and its sugars get pushed into the beans. The result is a coffee that has a natural sweetness to it.
